Soufflé Pancakes
Ingredients (40 pancakes)
1.8 kg self-raising flour
1.5 L milk
20 eggs
30 gr icing sugar
20 gr baking powder
30 ml olive oil
Method:

Whisk eggs, sugar, baking powder until well combined

Add milk, olive oil and flour - mix until you have smooth mixture.

Heat a non stick pan to medium heat

Use a soup ladle to measure one portion of pancake and transfer it to center of pan. Spread mixture over the pan with circle moves starting in the middle of the pan.

when you notice that mix is settling and little bubbles shows on top of pancake then turn over and wait until pancake rises to 1.5cm, you want to achieve nice golden brown colour on both sides.
