Fluffy omelette. (serves 2)
5 large egg whites
3 large egg yolks
2 tablespoon unsalted butter
salt and pepper to taste
4 slices gouda cheese
2 slices Bavarian ham
Separate the egg whites and the yolks in 2 separate bowls.
Whisk the egg yolks until they become homogenous and pate in colour.
Whisk the egg whites until they triple in size and become white with medium peaks. Carefully fold the eggs yolks into the egg whites until fully incorporated.
Pour the egg mixture into a medium frying pan with a lid.
Cook over a low heat until the bottom of omelette has set. Around 5 minutes.
Lift up each side of omelette and drop a tablespoon of butter, cover and cook for an other 5 minutes until the top of the omelette has set.
Remove the Lid from the pan and season the omelette (you can add your toppings in this point and fold your omelette), remove from heat san serve it in a plate.
